This simple yet effective tea is easy to make and perfect for when you feel a cold or flu coming on.

You will need:

1-inch piece of fresh ginger.

1-2 oz of Fresh thyme. (Fresh is best but dried will do).

1 good slice of lemon

1 teaspoon of natural honey

You can always add a clove or a pinch of cinnamon powder alongside the ginger for some extra spice!

1.       Grate or mince the ginger. There is no need to it peel first, but if you do wish to remove the peel then the best way is to use a spoon and gently scrape away the outermost layer.

2.       Place the ginger, thyme and lemon into a large cup and fill it with just-boiled water. Cover and allow it to infuse for 15 mins. This will keep the wonderful aromatic compounds from wandering off!

3.        Add honey to taste.

4.       Strain if you would like, however I leave all the ingredients in so that I can add some more hot water and make it last for longer.

5.       Drink while warm and enjoy a moment to relax!

Please note that a lot of commercial honey is diluted with fructose syrup and honey which is imported from China has a high risk of containing pyrrolizidine alkaloids both of these are detrimental to good liver health, so it is best to buy local honey whenever you can.
